Every time I make this drink I think of my Family and Friends…why because we kicked off New Year’s Eve with one of my favorite cocktails, with some of my favorite people in the world.
My ginger, lime, pineapple sippers, were a hit.
I find when I’m in good company it doesn’t really matter what I’m eating or drinking because the people and the conversations motivate me and bring out the best within. But, in this case the drink did offer a unique twist to the early afternoon. It brought out the giggles in all of us. Even before any alcohol was added to each cocktail, we were laughing. When I’m in good company that’s what happens—I get inspired—I get creative by making my guests feel welcome and special.
Now here’s my recipe for my Ginger Lime, Pineapple Sippers.
First, make a ginger/lime simple syrup
2- In a small pot combine 2 cups of water, and 1/2 cup thinly sliced fresh ginger, and 1/4 cup of sugar, and 2 pieces of lime peel. Bring all the ingredients to a boil. Stir until sugar is dissolved, reduce heat. Simmer uncovered for 7 minutes. Cool mixture to room temperature. Then strain using a fine mesh strainer into a bowl. Cover and chill for about 2 hours.
3- In a pitcher, combine chilled ginger/lime mixture, add 3 cups of chilled pineapple juice, and 4 tablespoons lime juice. Finally, stir in 2, 12 ounce cans of club soda. (For an alcoholic version just add desired amount of vodka in the pitcher). In each glass add ice cubes, lime slices and pineapple wedges.
