My Delightful creation–recipe included


I usually start off with one ingredient that I am craving and build a simple dish from there.

Yesterday, I was craving ricotta cheese! weird I know!!!

As I walked into the produce section of my local Wholefoods grocery store my senses were consumed with all the fresh and beautiful foods. I grabbed the heirloom medley cherry tomatoes, basil, Brussel sprouts, blueberries, and mango. Before I knew it I was developing a dish. I then got the idea that I wanted to combine all these ingredients on a piece of bread. And that’s how it came to be.

For this recipe you will need-a baguette, and ricotta cheese.

-Cut the bread in one inch slices

-Spread a generous amount of ricotta cheese on each slice.

Heirloom Tomatoes, and guacamole

-cut about 8 tomatoes in half

-1 teaspoon of chopped basil

-homemade guacamole or store bought guacamole

-Add about a teaspoon of guacamole on top of the ricotta bread spread, then add 3-4 sliced tomatoes, sprinkle some salt and pepper on the tomatoes, and drizzle with olive oil

Brussel sprouts, blueberries and mango

-slice about 5 Brussel sprouts,

-peel and slice ¼ mangos into tiny chunks

-1/4 cup blueberries

-Add the Brussel sprouts, blueberries, mango chunks in a bowl and add your favorite salad dressing and place on several pieces of you ricotta bread.

Chickpeas, red peppers, and celery

-open and drain a 15 oz can of chickpeas

-dice about ¼ of the red pepper into tiny pieces

-slice 1 celery stalk

-pinch of salt and pepper

– 1-2 tablespoon of white vinegar, and 1 tablespoon of olive oil.

In a bowl combine the chickpeas, red peppers, and celery, salt, pepper, vinegar (I love vinegar so I use a generous amount), and olive oil. Mix, and then add to your ricotta bread.
