99 days of Summer- day 40


Sips for the summer with your spouse.

I don’t know about all of you, but it’s been a busy few days, and I’d like to end the work week with a new creation. My Chicago summer ice tea.

While the weather has been chilly in Chicago, spirits have been uplifting. Having one of these cocktails with your spouse will make you feel like long warm summer days are just around the corner.  To accompany the kinda chilly nights I made a stack of summer chili nachos. So delicious.

Chicago Summer Ice Tea

Makes 6 servings (great for sharing with neighbors too)


  • 1 cup of fresh brewed tea. Green, black or herbal tea, or use any of your favorite brands/flavors. I used the brand by Adagio Tea called green rooibos blueberry.
  • 1 cup of lemonade
  • 1 cup of mango juice
  • 3 ounces of white rum
  • 4 ounces of triple sec


Pour all the ingredients together in a pitcher and stir.  Add ice to each glass, pour and enjoy.
