How to make an easy & healthy summer side dish.

Ingredients

2 cups of green/yellow beans trimmed

3 teaspoons of olive oil

2-3 cloves of garlic chopped

1 tablespoon of chopped parsley

1/2 teaspoon of feta cheese (optional)

1 teaspoon of pine nuts (optional)

Squeeze of lemon juice

Salt/pepper

Directions

In a skillet, sauté the green/yellow beans in 1 teaspoon olive oil, until tender and crisp about 2 minutes on each side. Remove and place on a plate. Then add, 1 more teaspoon of olive oil to the skillet, add garlic, and tablespoon of chopped fresh parsley, sauté until garlic starts to soften (about 1 minute) squeeze fresh lemon and pour mixture on top of the sauté beans. I finished it off with some fresh parsley, feta cheese and pine nuts, salt and pepper. Great dish for lunch or a dinner side dish.
