Hi everyone, I’m having my Mother-in-law over for lunch today….well not exactly. What I am having is her homemade apricot jam with my simple salad. I used her jam as a base for my dressing.
The salad dressing recipe:
1 teaspoon olive oil
1 teaspoon fresh squeezed lemon juice
1 teaspoon your favorite apricot jam (here my Mother-in-laws)
Mix all three ingredients together and pour over your greens. Here I used kale, red cabbage, carrots, chopped walnuts and sunflower seeds.
