Ditch the bun today, all you need are the burger and veggies! While prepping for this post I realized that there is so much we ‘take on’ a daily basis, things that we really don’t need. I’m not necessary talking about food. For example, maybe you realize you tend to ‘take on’ a negative attitude toward someone; or maybe you ‘take on’ more responsibilities and need to start learning to delegate; or maybe you ‘take on’ your Parents’ pain and need to start setting healthy boundaries. Whatever you feel you are taking on today see if you can begin to wean it off. Then let me know if you feel a little lighter, and perhaps healthier.
Recipe for my Chicken Lemon Burgers
1 Ib ground chicken
¼ cup chopped onions (you can grate them too)
1 tablespoon chopped red peppers
½ teaspoon salt
1/8 teaspoon pepper
1 teaspoon fresh squeezed lemon juice
½ teaspoon oregano
1 teaspoon feta cheese (optional)
Add 1 tablespoon of olive oil to the pan, and sauté onions, red peppers for about 5 minutes. Set aside and cool. To the ground chicken add salt, pepper, lemon juice, oregano, and sautéed onions and red peppers. When all ingredients are combined, mix in feta cheese. Divide mixture in 4 parts, and make burger patties, add to grill. Cook about 5 minutes per side, making sure chicken is fully cooked.
Top your burger with this fresh salad
½ cup chopped cucumbers,
½ cup tomatoes,
1 teaspoon chopped shallots
1 teaspoon feta cheese.
1 teaspoon fresh squeezed lemon
1 teaspoon olive oil
½ teaspoon fresh oregano
Pinch of salt and pepper
