This morning I wake up to a blanket of fog throughout the Chicagoland area. Much like the weather sometimes I find myself in a metaphoric fog. We all know that sunshine is the cure for such a circumstance. When I’m in such a state I look toward the colors, the light, the brightness, and positivity that are around me. I create these in my cooking, and find them uplifting and capable of burning through the thickest fog. Here my latest creation, a twist on a Croatian dish my Mom makes as a soup. My version is a healthier salad. Barley, edamame, corn, carrots and shallots. Sunny, fresh, and bright.
