Not yo’ Mama’s Salad Recipe

Change is hard, just ask my guests for lunch today–my parents, who are not used to my cuisine.    After a week of travelling I was craving something homemade and green.  I decided to create a simple salad for myself and my parents.   I didn’t know what to expect, but they loved it. I think you will too.

Ingredients

-2 cups of chopped kale

-2 slices of peeled fresh oranges

-2 slices of peeled fresh grapefruit

-1/4 cup of red cabbage

-1 tablespoon dried cranberries

-8 raw pecan halves

Citrus vinaigrette dressing

-2 tablespoons extra virgin olive oil

-1 tablespoon fresh squeezed grapefruit

-1 tablespoon fresh squeezed orange

-1 teaspoon agave nectar

-salt/pepper

Directions: place kale in large bowl.  Add red cabbage, sliced oranges, grapefruit, pecans and cranberries.  For the dressing pour all ingredients together in a small jar, mix and add to salad.
