Turkey Chili Fuego

I am making some healthy and delicious food for super bowl Sunday.  I will be posting something new everyday.  Hope you like my healthy version of some classic game day dishes.

1 pound ground turkey breast

1 sweet onion chopped

2 tablespoons extra virgin olive oil

1 teaspoon salt

1 teaspoon chili powder

1 teaspoon ground cumin

1 or 2 jalapeños chopped (leave seeds in to add heat-fuego)

1 jar 24 oz of tomato sauce

1 cup of chicken broth

1 (15) oz kidney beans or pinto beans drained and rinsed

1 cup of finely chopped kale

4 sweet potatoes cut in half.

  1. In a large pot add olive oil and place over medium heat. Add onions and sauté for 6 minutes, stirring frequently.  Next add ground turkey, stirring and breaking up the meat for about 5 minutes.  Next add salt, chili powder, cumin, and jalapeno.  Stir and add tomato sauce, and chicken broth, and kale.  Bring to a boil, then reduce heat and let simmer for 35 minutes.  Finally add kidney beans, allow all the ingredients to come together for a final 5 minutes.

  1. Now for the Sweet Potato-preheat oven to 400 degrees. Take each sweet potato half and wrap it in foil paper.  Pop it in the hot oven for 20 minutes or until tender but not soft.  Once out of oven allow to cool before scooping out some of the potato flesh.  Each potato half should look a boat, fill each boat with your turkey chili.  Garnish each potato boat will shredded cheese, fresh bell peppers or additional fresh chopped jalapenos.
