My favorite dish by far is my easy homemade foccacia bread stuffing. Honestly what’s better than a gooey, soft, and tasty stuffing. This year I made individual ramekin size portion for each guest.
1 loaf of fresh foccacia bread (I bought a rosemary one)
1 tablespoon of butter
1 shallot chopped
1 celery stalk chopped
4 cups of vegetable stock or chicken stock
1/4 teaspoon dried oregano
Handful of dried cranberries.
Directions: preheat oven to 300degrees F. Cut foccacia bread in cubes, place on cookie sheet and drizzle with olive oil. Bake at 300 F for 15 minutes or until browned. Let cool.
On medium heat, melt butter in a saucepan, sauté shallots and celery for 4 minutes, add foccacia bread cubes, vegetable stock and oregano. Stir and turn off heat. Add dried cranberries if you like. Spoon enough in each ramekin, place in oven to keep warm or serve.
