A healthy twist on Super Bowl Food


Why serve the ordinary when you can have the extraordinary for your super bowl event.

I like to shake things up every year by offering my guests something on the healthier side, but also indulgent.

I really didn’t know what dish I would create that would fit the theme, and style of my gathering. Until inspiration finally hit during my lunch break. I made myself a broccoli soup. But this wasn’t just a regular broccoli soup, well actually a purée. What made this dish a touchdown was the elements of flavor, texture, and appearance.

I made a grilled cheese sandwich, which I placed right on top of the thick velvety purée, then I topped it will shredded aged cheddar cheese, bacon, and my favorite ruffles potato chips. I took one mouth full, and was easily convinced that my new creation offered exactly what I intended, which was a lot of healthy mixed in with a little bit of indulgence. The perfect pairing for my super bowl party.

Give this new creation a try, and remember I only give you the base to which you can elevate and make these dishes fit your tastes and preferences.

Ingredients for Broccoli Puree
1 chopped onion
3 tablespoons of butter
8 cups of broccoli florets
3 cups of chicken broth (or vegetable broth)
½ of milk

Toppings-add others if you like
-1 avocado diced
-1 jalapeño sliced
-Your favorite ruffles potato chips
-Shredded cheddar cheese



Melt 2 tablespoons butter in your favorite Dutch oven pan, add chopped onions and sautée for 3-4 minutes on medium heat. Add broccoli florets and chicken broth, cover and simmer on medium heat for about 12 minutes, or until broccoli is tender-but not mushy.
Pour mixture into a blender and carefully start blending, making a broccoli purée. Blend the broccoli in batches until smooth. Once complete pour back into your cooking pot. Add milk and 1 tablespoon of butter, and fresh ground pepper. Simmer on low for 2 minutes.

Spoon into small bowls and allow your guests to add whatever toppings they desire.
I made these amazing grilled pear and brie sandwiches that are the perfect addition to this meal.
